    Full star rating because Ginger Pig is one of my favourite butchers The unmistakable cheerful ring of a What can I do for you today, love as I walk into the shop to buy a 100 day old chicken, and some delicious meat pastries I absolutely love pork pies and I will attempt to make one some day The meat isn t cheap at Ginger Pig but it s always worth it As someone who goes through phases of a vegan diet once or twice annually I m super picky about my meat even though I can t always affor Full star rating because Ginger Pig is one of my favourite butchers The unmistakable cheerful ring of a What can I do for you today, love as I walk into the shop to buy a 100 day old chicken, and some delicious meat pastries I absolutely love pork pies and I will attempt to make one some day The meat isn t cheap at Ginger Pig but it s always worth it As someone who goes through phases of a vegan diet once or twice annually I m super picky about my meat even though I can t always afford the good stuff So and when I can t afford the good stuff, I d rather just not Reading the book makes it all thelovely the beautiful photographs of the farm and Wilson describing the laborious tasks at the farm and so much attention to details whilst raising and processing the livestock Another thing that persuaded that 5 star rating is Wilson s introduction of the method of cooking a stew casserole in two sessions I ve always wondered if that is possible like would it ruin the stew because committing myself to a 6 hours long cooking sesh is just too much of a treat that most millennials surely can t afford Why else would they pay so much for an avocado Some of the recipes that I like are Roast Duck with Puy Lentils Olive Stuffed Chicken Leg Roast Michaelmas Goose Lemon Roast Guinea Fowl Clod of Beef Stew with Herb Dumpling Salt Beef from scratch Lancashire Hot Pot Roman Lamb Fillet Rolled and Stuffed Breast of LambMost of the recipes in the book are pretty simple and basic but they ve got a wholesome vibe that I m drawn to I don t like Poached Chicken with Noodle Pot but I get that other people might like it Also, I like the little notes below each recipe like for the Olive Stuffed Chicken Leg it was This recipe is very therapeutic to make Another thing that I really like was that he uses Walnut Oil in his recipes quite a bit and I love walnut oils nut oils in general they smell so lovely.No doubt the first recipe that I ll try from the cookbook is the beef stew Not sure if Ginger Pig sells fresh freshly shredded suet but will definitely use that for the dumplings Even if they don t have it in the shop, I wouldn t be disappointed as it s easily available online from other butchers I really enjoyed reading about the breeds of livestock Wilson uses Two chicken breeds of which are a couple of my favourites Welsummer and Marans as they lay the loveliest eggs Also, reading this excerpt from the cookbook gave me all the feels There is never a dull day on the farm I can never make definite plans as something always comes along and makes me have to think again, be it weather, animals, staff or breakdowns The list is endless One thing I do know is that I have spent so much of my life trying to produce the perfect animal that I may have forgotten to start my own family A conscientious farmer s life is all encompassing and relentless, but we do it because we are committed to our stock and to British farming Not like I ve done it before, but I m sure it s not a difficult job being a half arsed father tons of millions have done it But to do what Wilson did is such a beautiful art As long much I ve dreamt of having my own farm, I can t even begin to imagine the incredible hard work it takes to maintain one Plus, to introduce properly grown meat into a culture society where one can easily buy a horribly grown processed chicken for 2 is truly a big cockerel energy right there Also, I do think that everyone who so wants to eat meat deserves to eat good meat at an affordable price but that s a whole other argument capitalism innit

    I think this has just become my favourite cookbook It s absolutely gorgeous, has great introductions to all things pig, cow, lamb and game all the cuts and what kind of cooking works for each, a bit of butchery, identifying good meat , and the recipes are all brilliant Happily, because you don t need to do too much to amazing meat besides give it some heat to play in and some veg to eat it with, I can also eat just about every single thing in here We ve made three so far and looking forward I think this has just become my favourite cookbook It s absolutely gorgeous, has great introductions to all things pig, cow, lamb and game all the cuts and what kind of cooking works for each, a bit of butchery, identifying good meat , and the recipes are all brilliant Happily, because you don t need to do too much to amazing meat besides give it some heat to play in and some veg to eat it with, I can also eat just about every single thing in here We ve made three so far and looking forward to continuing to work my way through

    Great food philosophy and approaches husbandry which is rare in a cook book Good seasonal simple recipes that are perfectly manageable at home but very English food.
